Many of you have requested that I post some more recipes. So ask, and ye shall receive!

This INCREDIBLE recipe comes from one of my dear friends Michele of One Healthy You. Michele is a foodie in the best sense of the word, taking it one step further–she’s a RAW foodie.

What is the raw food diet, exactly? Well, exactly what it sounds like.  This way of eating is based on vegetables, fruits, nuts, and whole grains, and NOTHING is cooked above 116 degrees F. Proponants of this way of eating, like Michele, believe that high temperature cooking detroys the enzymes of the food that help with digestion and absorption of food.  Cooking, they say, diminishes the life force, the energy, of food.  Benefits of this diet can include increased energy, weight loss, improved digestion (for SOME), and improved skin appearance.  It’s true–I’ve met many raw foodies and they just GLOW (like Michele!)

Most raw foodists eat a 75% raw diet, but keep in mind that this way of eating does not work for everyone. Certain vegetables, such as broccoli and cauliflower, tend to be easier on the stomach when cooked (for me, at least). You have to experiment with what works for you (remember bioindividuality, people?), and summer is the perfect time to do that. Try adding in some raw, uncooked (or lightly cooked) foods to your diet, or dine at a raw food restaurant in your area, like Pure Food and Wine in NYC.

So, without further ado, Michele’s  super duper easy (meaning I can make it!) recipe:

“Blueberry Pie in Your Eye”

 Crust: 2 cups almonds                                               Equipment:  food processor
           Pitted dates or medjool dates                                            10 inch glass pie plate
Filling:  5 cups organic blueberries
            1 1/2 tblspns raw honey
            2 perfectly ripe organic bananas
Making the Pie:
Take 2 cups almonds put them in the food processor until they are finely ground, start adding dates till the mixture sticks together.  Take a paper towel with soy lecithin (or something else to grease the plate) and wipe the inside of the pie plate, make sure you see no yellow.  Transfer mixture to pie plate place in center and gently press down where you want the crust to go, then firmly press it in place it will fill the center not the sides well… maybe a bit.  Place on the side…
Take 4 cups of blueberries and 2 bananas sliced and place them in the food processor with  the honey, let it blend up use a spatula to scrape sides when fully blended. Then just add the 5th cup of blueberries and just stir
them around get them nice and coated, but do not blend! Then pour the mixture in the pie plate, let chill for 3 hours and you have the most nutritious, delicious summer pie!!
I eat it for breakfast or as a treat!!
